SERVES 2
INGREDIENTS
½ cup brown rice
Kosher salt
3 tablespoons fresh lime juice (basically the juice of 1 lime)
5 tablespoons extra-virgin olive oil
¾ pound skinless, boneless chicken thighs, cut into bite-size pieces (2-3 thighs)
2 heads baby bok choy
4 scallions, thinly sliced (about ¼ cup)
1 clove garlic, minced
1 teaspoon grated ginger (about ½-inch piece)
PREPARATION
1. Prepare the rice according to package directions, or just bring 1 cup water, the rice and ½ teaspoon salt to a boil in a small saucepan. Stir once, then lower the heat to a simmer, cover and cook until the water is absorbed and the rice is al dente, about 50 minutes.
2. In a large resealable plastic bag, combine the lime juice and 3 tablespoons olive oil with a large pinch of salt. Add the chicken, seal the bag, then massage the bag to coat the chicken. Refrigerate, massaging the bag once more halfway through, 20 minutes.
This is pretty funny.

This kid is probably the best human being on the planet.
Evan loves cats. After he adopted his own kitty, Macha, from City Kitties rescue in Philadelphia, he wanted to find a way to continue to help the cats they were rescuing. He was only 7-years-old, but he saved his allowance money for several months and donated $46.75 to the charity.
Dear City Kitties,
My name is Evan. I am 7 years old. And guess what? ... I LOVE cats! They are my favorite animals and I got my cat at City Kitties as well! THANK YOU for letting me get my new cat! Thank you, City Kitties.

This cat, Calvin, was adopted by Evan and his family after Evan took an interest in him, buying his portrait at a City Kitties art auction. Evan would come check on the cat, who was living in a foster home. Then Evan set up a sidewalk stand to sell figs from his family's tree to help raise more money in Calvin's name, raising $86, which he donated to City Kitties.
Eventually, Evan's family decided to adopt Calvin, but staged a little surprise for him. They told him that Calvin had finally been adopted and that he should go say goodbye. Evan asked City Kitties if Calvin would be living nearby, prompting them to show him Calvin's new address... his own!

MSN News reported that Ibrahim Langoo from Essex in the U.K. was digging into his fried chicken when he stumbled upon what looked like BRAINS.
"I have a habit of picking the chicken off the bone with my fingers and as I pulled the second piece apart, I saw this horrible wrinkled foreign body," he said.
"I threw it down onto my tray immediately. It looked like a brain. I suddenly felt grim and really sick."
KFC replied to the brain/chicken/whatever it was incident, saying:
"Although we haven't received the product, it appears from a photograph that unfortunately on this occasion a kidney, and not a brain as claimed, was not removed in the preparation process," a KFC spokesperson told The Sun.
"We're very sorry about Mr Langoo's experience and while there was no health risk, we agree it was unsightly."
Oh cool! A Kidney, that's way better!
Langoo added:
"I never want to eat KFC again - in Colchester or anywhere else. I'll eat chicken at home, where I can see how it's been prepared."
